I took this recipe from @quakervzla and it is delicious so I wanted to share it. Especially because you told me that sweets it’s what you crave the most when you feel anxious.
(For 12 cupcakes)
1/2 cup honey
2 cups of oatmeal (I used @quaker)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
2 teaspoons vanilla
1/4 cup cocoa powder
1/2 cup dark chocolate chips
Blend all ingredients, with the exception of chocolate chips, in high potency until you get a lump-free mixture.
Turn off your blender and integrate the chocolate chips with a spoon or spatula.
Empty the mixture into a previously greased or pan with molds almost to the top.
Sprinkle a few chocolate chips on the surface of each muffin and bake at 350ºF for 20 minutes or until they look firm on the surface.
Take out of the mold, let them cool down.
** Eat one (two max) a day, as a snack or with your coffee, it is a healthy version of cupcakes but you still have to control the portion.
