Avocado toast with eggs and mushrooms
Ingredients (for 2 toasts)
2 slices of bread
1 minced garlic
1 teaspoon feta cheese
Coconut oil (or olive)
Toast 2 slices of whole wheat toast. Mash half avocado with a pinch of pepper and a teaspoon of feta cheese (optional), and spread evenly on the toasts.
Mince one garlic clove and chop 2 mushrooms.
In a pan add 1 teaspoon of cooking coconut oil (or any healthy oil you use to cook), stir-fry half of the minced garlic and 1 chopped mushroom, when its done (around 3minutes) add an egg on top and cook as desired (I like them over easy). Once is cooked put on top of one of the avocado toasts, and repeat to make the other egg. Top with some salt and pepper, and some chili flakes (optional)
